Tricks to Make Halloween a Treat for Diabetic Children

Today, candy is the central focus of the spookiest holiday of the year.  In fact, the average American consumes 24 pounds of candy in a year, most of which is eaten right after Halloween according to the U.S. Census Bureau.   But for diabetic children, it can be difficult to enjoy the festivities when all their fellow goblins are in a frenzy to get their hands on mounds of sweet treats.

Marc Wolf, registered pharmacist and CEO of Diabetic Care Services, provides the following tips to help parents of diabetic children shift the focus off Halloween candy so the kids can have more fun.

- Explain to diabetic children ahead of time that they should not snack on candy until you are home from trick-or-treating. (Parents, that goes for you too!)

- Lots of walking can affect blood glucose levels for anyone with diabetes, so pack a healthy snack that you can rely on to battle lows.  This way, you avoid the temptation of dipping into the Halloween treat bag for a quick solution if your child’s blood sugar levels begin to drop.

- If your child has diabetes, choosing which type of candy to pass out is important because there is a good chance you will have leftovers.  If you select the correct type of candy, you can use leftovers to treat lows throughout the year.  According to the American Diabetes Association, chocolate and other higher-fat treats do not work well for treating lows.  Therefore, if you anticipate leftovers, choose hard candy, gumdrops or lollipops to pass out at Halloween so you can use the leftovers to treat lows.

- Do not feel you have to deprive your child of all Halloween candy because they have diabetes.  Instead, allow them to choose a fun size, smaller version of their favorite candy.  Just remember to adjust their meal plan based on the number of carbohydrates in the sweet treat. - After trick-or-treat hours are over, sit down with your child and help them choose a few of his or her favorite pieces of candy they can enjoy throughout the week.  To help diabetic children part with the leftover candy, allow them to exchange it for money, a toy or some other special treat (a special dinner, trip to the movies, etc).

- If you do not want to waste the extra candy by throwing it away, go with your child to donate the leftovers to a hospital or senior center.  Not only will your child learn healthy diabetes management habits, they will receive a lesson in sharing.

- Take the focus off Halloween candy by encouraging diabetic children to create an exciting Halloween costume.  You can even involve the entire family by designating a day to work on homemade costumes.

- Halloween costumes often require plenty of face paint, body paint and colored hair spray.  When the festivities are over, ensure you give proper attention to skin and scalp cleansing and care.

- No matter what the Halloween costume, ensure your child wears comfortable, closed toe shoes and invest in special diabetic socks that will keep feet clean and dry.  Whether trick-or-treating or at a costume party, it is important for children with diabetes to protect feet from potential cuts and scrapes and prevent blisters and soreness.

- Offer to host the Halloween party this year.  You will be able to ensure your child, and all the guests, enjoy healthy Halloween treats safe diabetic children rather than experience sugar shock.  Use food coloring to turn your favorite dip or sugar-free whipped topping orange, and pair with fruit and cheese or vegetables for a festive tray.  For dessert, dish out sugar-free chocolate pudding in individual cups and garnish with sugar-free whipped topping and sugar-free candy worms for a creepy surprise.

Do you know the diabetics community is expanding very fast nowadays? Do you know there are now more young diabetics than adults diabetics?

 

 Why?  How Could Children Be Diabetics?

Young diabetics are attributed mainly to their style of living and the types of food they consume as well as the overly loving parents they have.

Nowadays, parents pamper their children and feed them very well, in fact, too well ! Look into the fast food restaurants, just pick anyone and take a peek inside. Now tell me, Who are the majority of their customers? Yes, children ! Young children! And many of them have their meals at these fast food restaurant together with their parents. Very rarely would you be able to spot adults having their meals in fast food restaurants, without a child by their side.

Too Much Yummy Food

No, I do not deny the fact that the aroma of the fried chicken, the fries, the sandwiches are simply overwhelming, simply Yummy!…Irresistible!  Ahh… also not forgetting the well chilled soft drink! simply heavenly! Even an adult love fried food and sweet items, it would be unimaginable how the youngsters could turn away from such temptation. But gosh, the food is high in carbo & sugar! Favorite of the youngsters.

To make situation worse, most of us would slurp and gobble down the food … very quickly! Why? Very hungry, of course! I did that too … mainly because I would only start searching for food when I feel hungry. There are long queues every where, whether at the food courts, hawker centres, fast food restaurants, cafe, literally long queues at all food and beverages outlets. (By the way, have you ever wonder why queues at fast food restaurants are moving extremely slow? I just could not figure out why queues at fast food restaurants are so long (as if they are giving away free food) and did not seem to be moving at all!)

By the time we got our food, we would be feeling very terrible, our stomach groaning embarrassingly loud.

To silent the groaning stomach, many of us, especially younger children would gulp!… gobble down the food but because it would take sometimes for the food to reach the stomach and be digested, most of us would still be feeling hungry. This happen to both the olds and youngs.

Chances are, after eating, we would still be looking around for more food and stuff them into your almost fully filled stomach.

Ahhh…feeling very satisfied? Yes! but oops!… Yes, you have over eaten!

Your Body System Working Hard

Your digestive system is already working very hard to help digest the food you have eaten, turning the food into glucose or sugar to be distributed to the rest of the body which will give you energy to keep you going with your daily activities. In the meantime, your body system will also be busy producing a substance known as insulin to move the glucose into the blood system, the distribution system within your body, sending glucose to all parts of your body.

If you over eat, your digestive system will have to work doubly hard, turning the excessive food that you have eaten into glucose. With the excessive glucose, your body system will have to work hard distributing the glucose to all parts of your body.

Your Body System Cannot Function Normally

However, if your blood circulation is not too good, the glucose may not be sent around your body effectively. Glucose not being properly utilized would remain in the blood as sugar. when the sugar level in the body is too high, you will be exposed to type 2 diabetes, heart attacks, stroke etc. This apply to the youngs as well.

For people or children whose body system is unable to produce insulin or cannot produce enough insulin to help move glucose into the blood, they would also have the same problem of having too much glucose or sugar remaining in the blood. Thus, the number of young diabetics are increasing, due to over eating.

There are also others whose body system can produce insulin but the body system simply could not utilize the insulin to move the glucose into the blood. Such insulin resistance condition would also result in too much glucose or sugar staying in the blood.

If you continue to over eat regularly, there will be more glucose accumulated in your body system. This is very bad for your health. This is particularly so if you are already over weight and worse, if you do not exercise at all. Prevention of Yeast Infections

In America, diabetes is the most common type of chronic disease in children. Each year over 10,000 new cases of childhood diabetes are discovered. These children live fairly normal lives, attending school, playing in sporting events, and carrying out the daily activities of any other child. However, these children have normal lives due to the proper training of them, their parents, and their caregivers.

The vast majority of children with diabetes have Type 1. This means that their pancreas does not produce insulin. This is an autoimmune disease in which the body takes action and actually attacks itself. Because of the type of diabetes found in children and the lack of insulin produced in their body, the most common form of treatment for children is insulin.

The way that insulin is given and the amounts needed will be determined by the insulin diabetes team. The treatment will likely change as the child grows and changes his or her lifestyle.

One of the first steps in treating children with diabetes is to monitor the levels of sugar in the blood. In most cases, this is carried out at least three times daily but in most cases more often. Glucose meters that require small finger sticks are the most common form of monitoring used.

In many children, insulin is delivered through injections with an insulin pen. The pen has a very small needle and a cartridge with insulin. However, some children are given an insulin pump. The pump is worn at all times and is connected to the body through a tube that is inserted under the skin into the abdomen. The pump is programmed to release the insulin into the body. The amounts of insulin delivered by the pump can be adjusted if needed.

In addition to treating person with diabetes children with an insulin plan, a diet plan is also discussed. A nutritionist will help you determine the exact amounts and types of foods that are best for the child. Unlike popular belief, most person with diabetes children can occasionally have some sugary foods. However, it is extremely important that the child have a well-balanced diet plan including fruits, vegetables, and whole grains. In some cases, finding the best diet takes trial and error to determine how the child’s body reacts to certain foods.

Part of treating children with diabetes includes monitoring physical activity. All children need exercise. person with diabetes children should not be discouraged from playing sports or being active. However, physical activity often causes the blood sugar to become lower. Until it is obvious how your child’s body will respond to the activity, it is essential to carry out more periodic blood sugar monitoring. The levels in the blood can be affected for up to twelve hours after physical activity.

Sugar free cooking is a great skill to learn. Especially when you realize what the benefits are to learning and implementing such a skill. Even Children, like adults, are often diagnosed with diabetes. Most children have type 1 or juvenile diabetes that will require insulin on a regular basis to sustain proper body functions. There are growing numbers of children that are now being diagnoses with type 2 diabetes that has historically only been found in adult populations.

Most facts about children and diabetes highlight the importance of understanding this disease and finding ways to manage and control it effectively:

One in every 300-450 children in the world has diabetes. Approximately 175,000 children in the United States under the age of 18 have diabetes. Type 1 or juvenile diabetes occurs when the immune system begins to generate cells that destroy the pancreatic cells responsible for producing insulin in the body. If the child does not receive insulin every day the child will die. 13,000 children are diagnosed with type 1 diabetes every year. These children are at a greater risk for heart attack, stroke, kidney disease and immune complications throughout their lives. Type 2 or adult onset diagnosis is becoming more prevalent in children. This is a condition where the body is unable to utilize the insulin produced because it has built up a resistance to the insulin. Over time the pancreas is unable to produce sufficient quantities of insulin, and complications arise. Type 2 diabetes is more closely linked to obesity, especially if there is a history of diabetes in the family. It is also more prevalent in African American, Latino, Asian, and American Indian children.

Controlling diabetes in children

Just like adults, children diagnosed with type 2 diabetes will need to closely monitor both their food intake and the amount of exercise that they complete each day. While not required to eliminate all their favorite foods, it is important to teach children concepts of portion control and healthy eating. Often in todays culture there is so much to get done in a day that meals are often skipped or eaten on the run or in the car. Fast foods are not a good substitute for fresh fruits and vegetables, lean meats and whole grains.

Try to schedule so that your child has time to sit down to a balanced meal as often as possible, ideally three times per day. Try to include whole grains, fiber, lean meats, fish, dairy products and fresh fruits and vegetables. To get children to eat healthy try the following:

Trail mix including a variety of nuts, dried soy nuts, dried fruits instead of potato chips. Granola bars instead of cookies or donuts. Whole grain bread instead of white bread. Carrot and celery sticks instead of French fries Bake foods instead of deep frying Salads with meals or as an appetizer before meals Raw vegetables or fruits dipped in yogurt

Remember that modeling healthy lifestyles will help your children learn. Exercise together as a family. Go for a bike ride, walk, or go to the park and have fun together. Small changes in lifestyles can lead to big changes in health conditions over time. Start small and work together as a family to reach your diet and exercise goals.

4 Symptoms Of Diabetes In Children

Discovering that your child has diabetes can be a wrenching discovery for any parent. But, even so, it is best to to find out earlier than to completely miss the signs of diabetes in your child.

Diabetes in children, particularly really young children, can be difficult to diagnose. Even so, every year over twelve thousand children in the country are diagnosed with type one diabetes. Taking care of a child can be so time consuming and overwhelming in even the best of cases that the signs can be easy to miss, even if the adult is fully aware of the symptoms.

So what, exactly, are the symptoms of children with diabetes?

1) The need to urinate a lot – If you notice  your child having to go to the bathroom a lot more than normal, or if he starts wetting his bed all of a sudden, be aware that this is one of the symptoms that many children exhibit when they develop diabetes. However, you should not be too concerned if this is the only symptom of diabetes that your child exhibits. There can be other reasons for increased urination such as urinary tract infection, the inability of the child to completely empty his or her bladder, or even Pollakiuria – known informally as Daytime Urinary Frequency Syndrome.  Nevertheless, if your child is having to urinate a lot more than normal, you should take him in to see his pediatrician for a check up.

2) A dramatic loss in weight – This is one of the more extreme symptoms of diabetes in children because children do not normally lose weight. They gain weight. Other causes of dramatic weight losses in children are side effects of drugs and cancer. But, a child losing a drastic amount of weight in a short period of time is a dangerous sign, regardless of whether diabetes is involved, or not, and he should be taken to see the doctor without delay.

3) The need to continually drink water or other liquids – In children with diabetes, fluids are pulled from the tissues of the body. This is because as sugar builds up in the bloodstream, it eventually reaches the point where the body has to get rid of the excess glucose. It does this by eliminating the excess sugar via the urine. The body, however,  cannot create urine without water. If the blood does not contain enough water, the body has no other choice than to extract water from the surrounding tissues. This, in turn, causes the body to become dehydrated which results in the thirst mechanism kicking in.

Symptoms of Diabetes

In non-insulin dependent diabetes mellitus (NIDDM), which is also called type II, adult-onset, or stable diabetes, the body has enough insulin or even high levels of this hormone. The main problem is the body’s resistance to insulin.

Insulin receptors or cells that accept insulin don’t function well or are in short supply. This usually occurs in overweight people over 40. These people don’t always need insulin injections but their blood sugar level can be controlled by means of diet, exercise, and oral hypoglycemic agents -medications taken by mouth that lower the concentration of sugar in the blood.

“Most persons with NIDDM are overweight or obese. Excess weight worsens the state of the diabetes, and weight reduction has a favorable effect. In some instances, insulin injections will be required to keep blood glucose concentrations within satisfactory limits but, unlike the situation in IDDM, omission of these injections will not result in complications,” said Dr. David E. Larson, editor-in-chief of the Mayo Clinic Family Health Book.

“Medicines taken by mouth called oral hypoglycemic agents, often are helpful in NIDDM but are of no value for treating IDDM (insulin-dependent diabetes mellitus). As a result of a weight-loss program, insulin or an oral hypoglycemic medication often may be decreased or eliminated,” he added.

The classic symptoms of diabetes are frequent urination and thirst, excessive hunger, weight loss in spite of increased appetite, fatigue, nausea and vomiting. Other signs are itching in the genital area, skin infections, slow healing of cuts and bruises, blurred vision, and occasionally, impotence in men and lack of menstruation in women.

In mild cases or in those with NIDDM, these symptoms may exist for years but the disease is discovered only during a routine examination which reveals high concentrations of sugar in the blood (hyperglycemia) or urine (glycosuria).

Before the advent of insulin, there was a very little hope for diabetics. Most of them lived for a few months only. A diagnosis of diabetes in those days was like getting a death sentence. As Dr. Isadore Rosenfeld of the New York Hospital Memorial Sloan-Kettering Cancer Center said in The Best Treatment:

“This knowledge about how insulin works the juvenile verses the adult form of diabetes, insulin receptors, and the auto immune concept – has all come to light only in the last decade or so. I am a big fan of natural cures, that is, I’d rather take honey and glycerin for a sore throat than some sort of chemically manufactured drug. Cranberry-Orange Relish

Gluten Free and Dairy Free Recipe

Ingredients

Makes 2 cups

2 cups fresh or defrosted frozen cranberries 1/4 cup diced red onion 1 large jalapeno pepper, seeded and finely chopped 2 tablespoons fresh lime juice 2 blood oranges, or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved 2 teaspoons freshly grated ginger (not processed) 1/2 cup sugar (no refined sugar) 2 stalks celery, peeled to remove strings, cut in 1/4-inch dice 1/4 cup fresh mint leaves, coarsely chopped 1/4 cup pecans, toasted, broken in pieces Directions Place cranberries in food processor, and pulse to chop coarsely, about five pulses. Transfer to a medium bowl. Add onion, jalapeno, lime juice, orange sections and juice, ginger, sugar, and celery; mix gently. Refrigerate for at least 1 hour and up to 2 days. Just before serving, add mint and pecans, and toss to combine.

Gluten Free Recipe

Ingredients

1 cup onions, chopped
1 cup celery with leaves, chopped
4 ounces sliced mushrooms
3 Tablespoons butter or margarine
1 cup rice, uncooked
2 cups gluten-free chicken broth, boiling
1 teaspoon salt
pepper to taste
3/4 teaspoon gluten-free poultry seasoning
1/2 cup sliced almonds, toasted

Directions

Saute onions, celery, mushrooms and uncooked rice in butter until vegetables are tender and rice is golden. Put in a 2-quart buttered, shallow casserole. Stir in seasonings and chicken broth. Cover casserole and bake at 350 degrees for 30 – 40 minutes, or until rice is tender and liquid is absorbed. Fluff with fork, sprinkle with almonds. If casserole has no cover, use foil sealed to top of dish. Makes 5 1/2 cups.

Variation

Reduce celery to 1/2 cup and add 1/2 cup green pepper, chopped and I cup gluten-free ham, cooked and chopped.

3/4 teaspoon GF curry powder can be substituted for pepper

Diabetes Doesn’t Mean An End To Traveling

You’ve been diagnosed with diabetes, fortunately, diabetes does not mean what it once did and current research and break through’s mean that things are continuing to improve as you read this.

Vacations, airline travel, cruises, and long drives to a vacation destination are all possible. It takes some planning and some extra work, but you can do it.

You need to plan for them and prepare for possible emergency, allowing for a safe and enjoyable vacation for you.

• Consult with your doctor and your medical support team about changing insulin doses and an extra prescription for insulin.

• Carry a snacks and juices and plenty of water wherever you go. This will help if you need something quick to bring up sugar levels. Keep extra diabetes supplies in the same pack. If you keep everything together, they will be handy when the need arises.

• Be sure to pack extra supplies in a hand bag or purse, it’s a good idea to even pack your diabetes and extras in several bags.

• Always wear your medical alert bracelet and any other medical information that might be needed.

• Your friends and families should know the route you are traveling.

• Making reservations for busy restaurants may help you avoid long waits. They also may be able to provide you with nutritional information about menu selections.

• Remember that any change in physical activity, even packing or loading up the car, can cause blood glucose levels to swing high or low.

• Insulin should not be allowed to freeze and must be kept out of direct sunlight, as should all supplies, sunlight can affect test results. Ice packs can be used to keep insulin chilled.

If they ask you to remove your pump, remind them that it is a needle under your skin.

Remember when flying; don’t check all of your diabetic supplies. If you have watched the news, you know there is many bags lost each year.

Checking your blood sugar more often during time away from home is best. It is recommended you check at least six times a day to avoid any problems. Be prepared for changing blood sugar levels because of heat, excitement, and schedule changes. It is also recommended is to drink at least 64 ounces of water each day and more if you are more active than usual. You should drink the same amount of water even if you are visiting a beach or a pool.

The nutritional recommendations for juveniles with diabetes are much the same as the general population in this country. Children with diabetes need to eat a well balanced and healthy diet in order to keep their blood sugar levels in the normal range. Finding out that their child has diabetes can be quite shocking for many parents. One of the most challenging parts of any diabetics lifestyle change is learning how to prepare meals and snacks. This can be doubly hard for the parents of a diabetic child because following the dietary advice of the doctor and dietician can affect the entire household.

Attempting to learn what foods to feed a juvenile with diabetes can be confusing at first. There is a wealth of information in books and on websites but for most parents in can be overwhelming trying to figure it all out. The important thing for parents with newly diagnosed diabetic children to do is learn to spot the good information from the bad.

The best place to start is the American Diabetes Association where they will find the Diabetes Food Pyramid. This pyramid is much like the USDA food pyramid that everyone is familiar with with one difference. The USDA pyramid classifies food by the group they are in whereas the diabetic food pyramid groups foods based on their carbohydrate, protein, and fat content and breaks them down into the amount of servings for each. There are six groups that make up the diabetic pyramid and they include starches, proteins, fats, meats, fruits and vegetables.

If we take a look at each category we can get a better understanding of each and how they fit into a well balanced diabetic diet plan.

Starches and Grains:  These are the primary sources of carbohydrates for everyone. These include foods like whole grains, rye, oats and the starchy vegetables such as potatoes and corn. This group also includes the dry beans such as pinto beans and black eyed peas. The suggested number of serving per day is between six to eleven. This is a range and must be personalized to the individual’s needs and goals with the help of a registered dietician.

Vegetables: Vegetables should always be a part of every dietary plan. They are full of many vital nutrients, are low in fat, and high in fiber all of which contribute to good health. Diabetics should have three to five servings per day. It is important to note that the starchy vegetables are not included in this category and should not be substituted into this group of the pyramid.

Fruits: Fruits are loaded with vitamins, minerals and fiber as well as carbohydrates. Serving sizes are determined by the individual fruit and suggested serving are two to four per day.

Milk: Milk and dairy products are essential in that they contain protein, calcium and many of the vitamins we need each day. Because they can contain a substantial amount of fat it is best to choose low fat or non fat versions of these products. The pyramid recommends two to three servings per day.

Meat and Meat Products: Meat and meat products are a primary supply of protein for all people. They also provide essential vitamins, minerals and amino acids the body needs to function in a healthy fashion. Choose only lean cuts and trim any visible fat to help keep the amount of saturated fat ingested to a minimum.

Fats, Sweets and Alcohol: While diabetics can partake of these it is recommended to keep their use in meal preparation and snack to a minimum. For the juvenile with diabetes this is important in that it teaches them food habits that will stay with them for the rest of their life.

Makes 2 cups

2 cups fresh or defrosted frozen cranberries 1/4 cup diced red onion 1 large jalapeno pepper, seeded and finely chopped 2 tablespoons fresh lime juice 2 blood oranges, or navel oranges, peeled, sectioned, and cut into 1/4-inch pieces, juices reserved 2 teaspoons freshly grated ginger (not processed) 1/2 cup sugar (no refined sugar) 2 stalks celery, peeled to remove strings, cut in 1/4-inch dice 1/4 cup fresh mint leaves, coarsely chopped 1/4 cup pecans, toasted, broken in pieces Directions Place cranberries in food processor, and pulse to chop coarsely, about five pulses. Transfer to a medium bowl. Add onion, jalapeno, lime juice, orange sections and juice, ginger, sugar, and celery; mix gently. Refrigerate for at least 1 hour and up to 2 days. Just before serving, add mint and pecans, and toss to combine.

Ingredients

1 cup onions, chopped
1 cup celery with leaves, chopped
4 ounces sliced mushrooms
3 Tablespoons butter or margarine
1 cup rice, uncooked
2 cups gluten-free chicken broth, boiling
1 teaspoon salt
pepper to taste
3/4 teaspoon gluten-free poultry seasoning
1/2 cup sliced almonds, toasted

Directions

Saute onions, celery, mushrooms and uncooked rice in butter until vegetables are tender and rice is golden. Put in a 2-quart buttered, shallow casserole. Stir in seasonings and chicken broth. Cover casserole and bake at 350 degrees for 30 – 40 minutes, or until rice is tender and liquid is absorbed. Fluff with fork, sprinkle with almonds. If casserole has no cover, use foil sealed to top of dish. Makes 5 1/2 cups.

Variation

Reduce celery to 1/2 cup and add 1/2 cup green pepper, chopped and I cup gluten-free ham, cooked and chopped.

3/4 teaspoon GF curry powder can be substituted for pepper

Assessing how things are going and establishing effective diabetes management at school can yield a variety of positive results, including:

* Promoting a healthy, productive learning environment (when your child is experiencing lows, it is very difficult for him or her to learn)

* Reducing school absences and classroom disruptions

* Creating an effective response in a diabetes-related emergency

The younger the child, the more important it is to check in with the school on a week-to-week basis. Age matters: A recently diagnosed kindergartner will need a much different approach than the one you’d take with a high school senior who has been managing diabetes since childhood.

At every age, however, you should talk with your child regularly about how things are going. In a little heart-to-heart, you might help him or her become adept at recognizing signs of trouble and asking for help if and when it’s needed. You also have to give school personnel enough information so that you can trust they will look out for your child’s welfare.

Provide the school with an individual action plan from your child’s doctor that gives instructions on: testing, shots, oral medications for low blood sugar problems, dietary requirements (e.g., need for snacks), and explicit plans for handling low and high blood sugar.

”If the nurse isn’t available, even the bus driver and other school personnel need to be able to recognize if your child is having symptoms of hypoglycemia and offer a form of quick-acting sugar,” Zamudio says. Work to establish an overall diabetes-friendly environment. The American Diabetes Association’s Safe at School campaign recommends that capable students should be allowed to self-manage their diabetes in the classroom and during school activities. What is sugar free stevia? Quite simply, Stevia is a plant and there is no sugar in it. This plant is native of South America and has been used as a sweetener for centuries by native people. It is 100 times sweeter than sugar and completely natural. Only recently has this mystery plant product been making an appearance to mainstream America.

 In the USA Stevia must be sold as a supplement rather than a sweetener. However, the vast majority of people use it as a natural sweetener. We all know the power of big business and for now the chemical sweetener companies are doing everything in their power to keep this healthy natural root off the shelves of grocery stores. You can likely find it in a health food store and some grocery stores will carry it but you will have to really look for it in a grocery store. Usually the display is small and most employees do not know what it is. The fact it cannot be advertised as a sweetener makes it more difficult to display also.

Stevia comes in powder or liquid. Each version works well in different food applications. I personally prefer the powder but use both. One of my favorite uses for Stevia is in oatmeal, rolled oats with strawberries, blueberries or other fruits. It’s absolutely delicious and there’s no sugar resulting in fewer calories. No chemicals either. Iced tea is very good when sweetened with stevia. It’s very good sprinkled on fresh fruits. Study Finds Children With Diabetes More Likely to Develop Eating Disorder

Scientists have recently made a link between the onset of childhood diabetes and development of an eating disorder later in life. Researchers from the Medical College of Georgia’s Prevention Institute are studying the potential link as to the causes behind the connection including prescription drug treatments.

With funding from The American Diabetes Association (ADA) and assistance from Harvard and Emory Universities, researchers will follow 90 diabetic children between the ages of 10 to 17. The researchers will attempt to determine the causes of the over-eating disorder as well as to follow eating patterns, behaviors and “psychological adjustment,” according to a Science Daily news article.

Childhood Diabetes

According to the National Diabetes Education Program (NDEP), which is part of the U.S. National Institutes of Health (NIH), type 1 diabetes may be increasing in children and many additional cases of type 2 diabetes are also being reported among children and adolescents.

Children with diabetes are becoming a major problem in this country and around the world. This childhood epidemic is growing.

What is the concern?

The trend is growing. In 1999 13% -14% of boys and girls aged six to 19 were overweight. Over the past two decades these numbers have gone up 300%. More children are getting diabetes. Which will probably mean, more adults will have diabetes into the future?

A great percentage (over 80 %) of kids and adolescents that have diabetes are overweight. And this trend is increasing.

We are becoming less and less physical. Many of our activities are either on the computer, watching television or playing video games. It is so cool to have the latest and greatest cell phone with all the gadgets, or the most up to date software package for ones computer. With less movement comes increased girth.

Our children are waiting for us to lead the way.

As an adult you can deliver the message to your children in a way that they can benefit from what you have learned. This disease is similar for adults as it is for children. Canola oil or canola spray for pan preparation 
24 ounces low-fat cream cheese at room temperature 
2/3 cup skim or part skim ricotta 
5 large eggs 
1  ½ cup sugar-free Splenda (sucralose) or sugar-free sweetener of your choice 
15 ounce can pure pumpkin (not pumpkin pie mix) 
2 teaspoons cinnamon 
1 teaspoon ground ginger 
¼ teaspoon ground cloves 
2 teaspoons sugar-free vanilla  Freshly grated nutmeg   

Garnish: (optional) 
1/3 cup pecans or hazelnuts, toasted and coarsely chopped   

Directions:
Preheat oven to 350 degrees.  Coat bottom and sides of a 10-inch spring form pan with canola oil.  Use canola spray or put some canola oil on a paper towel and rub bottom and sides of pan with the oil.    

Put cream cheese in large bowl and beat with electric mixer until smooth.  Add ricotta, eggs, pumpkin, Splenda, vanilla and all spices except the nutmeg.  Beat until well blended.  Pour batter into prepared pan.  Grate nutmeg all over the top of batter in pan.     

Bake for 1 hour or until cake rises and slightly browns.  Turn off heat and leave in oven for 1 more hour.  Remove from heat, cover with plastic wrap and chill for at least 4 hours before serving.

Some Important Tips for Sugar-free Recipe

There are so many good reasons to reduce the amount of sugar in the foods that we eat. Processed sugar, especially in the amounts that we eat it here in the United States, is a major contributor to obesity, and provides very little substantive nutrition for the number of calories that it delivers. While it is easy to reduce sugar in some aspects of your diet, there are some sticking points. If you love to bake, for instance, you’ll find that just cutting out the sugar in many recipes will result in a failed recipe. In many recipes, sugar is more than just a sweetener. It provides texture, contributes to browning and may serve to help other chemical processes happen.

That does not mean you have to give up on baking if you want to cut out sugar. There are a number of tips that can help you reduce sugar in your favorite cakes, cookies and other sweet baked goods and still enjoy them. These tips are helpful for cooking with sweeteners such as Splenda Granular.

Amount
In some recipes, sugar is important for the structure and texture. This is especially true in candies and confections like nougat, and in frostings and sweets. Most granular sweeteners do not appear to get as creamy and smooth, when mixed with butter, margarine and shortening and it may even separate when you add eggs. It won’t affect the final product; just continue on with the recipe.

Cooking with Yeast
Sugar substitutes won’t activate yeast, so if you’re making yeast breads with a sugar substitute, you’ll need to retain at least two teaspoons of sugar in the recipe, or replace the sugar with another natural sweetener like molasses or honey.

Adjust Bake Times
Baked goods cooked with granulated sweeteners may bake more quickly than the recipe dictates. Check cakes 7-10 minutes before the recipe’s bake time, and brownies, quick breads and cookies 3-5 minutes before the recipe says it will be done. Remember that sugar free recipes may not brown during baking and rely on other indicators.
